The Easiest, Tastiest Vegan Banana Ice Cream EVER- Just One Ingredient!
It's an excruciatingly hot time to be a reseller here in North Florida. But I've been enjoying bowl after bowl of banana ice cream (and maybe 12+ cups of water a day!) to make up for it! This banana ice cream is incredibly easy, healthy, and so simple to make! Here's what you do:
Three Steps for Easy Banana Ice Cream:
1. Freeze very ripe (they must be very spotted for maximum sweetness) bananas overnight
2. The next day, blend (or food process) 2 cups of bananas (in my Vitamix it takes seconds) until smooth
3. You can blend with cocoa powder, vanilla extract (1 TBS), and other frozen fruit and sweeteners to taste
Scoop it out, serve, and enjoy! It is SO damn creamy! Eat it fast before it melts!
You can't go wrong with this recipe, as long as your bananas are ripe they will turn out delicious no matter how much or how little extra ingredients you add. Another variation boyfriend and I love is with one packet of stevia powder and 6 tablespoons of cocoa powder to make chocolate banana ice cream! (Pictured here). I like to buy and freeze bananas in bulk, yesterday I got a discount on overripe bananas (perfect for this recipe- or any banana recipe!) and bought home two huge bag fulls for less than .39 cents a pound. At the flea market I've bought 40 lbs for 10 bucks before and peeled and bagged they don't take up much room in the freezer.
